I would recommend our VM Ultimate which is a 2gb VM with 30gb disk space and 2000mhz processing power, we can upgrade the disk space as required.
Plesk can be supplied, how many domains do you require for the plesk license, 30, 100 or unlimited and do you require the power pack ?
With regards to support we have a number of support packages ranging from our Mild, Extreme and Ultimate support packages each with different SLA and turnaround times all support is available 24/7 via phone.
As for the a rock solid mail server we use Cisco Ironport, which is one of, if not the best mail server along with enterprise grade spam and anti virus protection.
Daily backups can be in the form of directly out from plesk to external storage, or even complete image backups of your entire virtual dedicated server daily, weekly and monthly.
From a data point of view you can pick and choose as much or as little data as you require which can be dialed up and down when you require it.
