I like Soholaunch's Pro Edition. While it's not strictly a CMS, it's a Site Builder which is almost the same thing, it's really easy to use. So easy that I use e-mail to instruct clients who to do their own content.
I'll install it, set up a few bits and pieces then let them do the rest. I also do constant backups while they fiddle.

It installs on the server and mods are made in real time, also on the sever, using your browser. No stuff on the PC. You can also install chunks of HTML etc.
